Gari Fried Plantains, African Food

10 Garri

Garri (gari, garry, or tapioca, as it’s also known) is commonly eaten in West African countries such as Ghana, Nigeria, Cameroon and Sierra Leone. This food item is made by making a mash from cassava tubers and allowing this mash to ferment for 1-2 days. After fermentation, the moisture is pressed out and what remains is sifted and roasted.

Garri is enjoyed as both a light meal or snack. It can be sprinkled with sugar and eaten dry, turned into porridge by adding water (warm or cold), or made into a stiff dough called eba. In Ghana, it is often eaten with ‘Red Red’ and fried plantains.
